Chef - Holistic Health Coach
Gina Trivelli came to her passion for food early and naturally as a child savoring the aromas of her mother’s Italian kitchen where there was always something fresh and healthy simmering on the stove. These early encounters with good food formed the cornerstone of her philosophy toward cooking: let the food speak for itself by using clean ingredients in their purest state enhanced by fresh herbs and aromatics.
Gina was classically trained at the Culinary Institute of America in Hyde Park, NY where she was schooled in the art of cooking, learning everything from classical to contemporary cuisines. Building on the culinary methodology and knowledge she gained at the CIA, Gina developed a unique approach to cooking that seeks to maintain the essence and integrity of each ingredient and employ it in a way that nourishes body, mind and spirit.
Rather than a style of cooking, it is a way of respecting food and bringing it to the table in a way that accentuates its natural flavors and conserves its healing properties.
After her graduation from the CIA, Gina opened Manna Dew Cafe in Millerton, NY which became a favorite of those wanting inventive locavore and earth-to-table dining. (The restaurant continues under the ownership of Gina’s brother).
In parallel with Gina’s interest and training in culinary arts was her involvement with health and healing, which began with a teenage summer job in a health food store, and culminated in her certification as a Holistic Nutrition Health Coach.
For the past 21 years, Gina has been a private chef, caterer and Holistic Health coach in the Tri-State area. Her clients range from those who want private dinner parties catered from A to Z with foods and wines to individuals with food restrictions and sensitivities who need healthy meals delivered to their homes.
Gina’s clients also consist of busy working mothers who want to provide simply prepared nutritious meals to their families.
Her holistic health coaching services are geared towards helping people make healthy lifestyle choices and better their nutrition. She also helps people heal from sickness through proper whole foods diet based on locally-grown produce, clean poultry and meats and anti-cancer-healing foods.
Gina's CIA training and health coaching practice have come together in a new way with Manna Catering in Salisbury, Connecticut. Chef’s philosophy is that food is the best medicine.
We use fresh, seasonal, and often locally sourced, ingredients to make elegant and delicious food that is also health-promoting and nutritious. By working directly with local farmers and growers we are assured of the freshest food and at the same time we are supporting animal welfare, the local economy and helping preserve farmland and open space.
